What Is Nước Dừa?

Nước Dừa translates simply as 'coconut water' — the clear, faintly sweet liquid inside a young green coconut. In Vietnam it's an everyday pleasure: sold by street vendors with the top hacked off and a straw dropped in, sipped in the shade through the hottest part of the afternoon. It's subtle rather than sugary, gently nutty, and best when it's genuinely cold.

The good versions come with a bonus — the tender white flesh of the young coconut, soft enough to scoop with a spoon. It's slippery, mild and slightly creamy, and it turns a drink into something you eat as well as sip. That's the version we pour at Bà Năm.

How We Serve It on Grote Street

Our Nước Dừa comes in a tall clear glass, packed to the brim with ice so it stays cold from first sip to last. Through the glass you can see the big, irregular pieces of young coconut flesh drifting between the cubes — the part regulars fish out with the spoon before they've finished the drink.

A wedge of lemon and a sprig of fresh mint go on top. The lemon adds a small edge of brightness, the mint a clean lift on the nose. It's a simple drink treated with care, which is fairly typical of how things work here — we're not a luxury venue, just very genuine. It's $8 on the live menu.

From Trảng Bàng to Chinatown

Everything at Bà Năm traces back to the home kitchen of Bà Năm Lời in Trảng Bàng, Tây Ninh, where she's been cooking these recipes since the 1970s. Her grandson Huynh Nguyen brought them to Adelaide, opening on Grote Street in 2023 with owner Thi Gai Vo. The broth still takes 18 hours; the beef is local, and Huynh still does his Sunday farm runs to source it.
